Three mills, none of them further than sixty kilometres. We know the fields, we know the years — and a bad year is tasted before it is measured.
HOW WE WORK
Four in the morning. The starter has taken the whole night; nothing has been rushed. The oven reaches 250 °C, the loaves go in, the crust sings while it cools.
